Soft aromatics of lavender, lilac and ripe peach mingle with tropical fruit notes on the palate. With hints of grapefruit and candied
lemon peel, this Dry Riesling is tangy and refreshing with a crisp and lingering mineral finish.
On November 9, 2011, 8.4 tons of R3 Riesling grapes were harvested with a harvest chemistry of 20.4 Brix, a TA of 9.0 g/L, and a pH of 3.17.
That same day 8.5 tons of R2 Riesling grapes were harvested with a harvest chemistry of 19.8 Brix, a TA of 7.0 g/L, and a pH of 3.11. The fruit was crushed, destemmed and pressed in a single lot and combined with the lot from R3. The overall chemistry was 20.1 Brix, 8.1 g/L TA, and a pH of 3.09. After pressing, the juice was settled for 2 days, and fermented to 0.8% residual sugar and was stopped with chilling on 01/09/12. The wine was racked off the lees on 01/19/12, and chilled for another 6 weeks to cold-stabilize.
