2012 Dry Riesling

Warm aromatics of ripe peach mingle with tropical fruit notes on the palate. With crisp hints of lime and candied lemon peel, this Dry Riesling is tangy and refreshing with a soft, mineral finish.
On October 27, 2012, 10.7 tons of Riesling grapes were harvested with a harvest chemistry of 20.4 Brix, a TA of 8.1 g/L, and a pH of 3.10. The fruit was crushed, de-stemmed and pressed in a single lot. After pressing, the juice was settled for 3 days, fermented with the addition of Ultrazyme pectolytic enzymes and 32 ppm sulfur dioxide. The cleared juice was racked to another tank, warmed, and inoculated with Epernay 2 yeast. The fermentation stuck at 2.5% RS, so a starter yeast culture was of V- 1116 was re-introduced to the main fermentation on 12/13/12 and was stopped with chilling on 12/31/12. The wine was racked off the lees on 01/15/13, and chilled for another 8 weeks to cold-stabilize. The wine was sterile filtered at bottlings on 4/5/13 and 6/5/13.
Try it as an aperitif with salty appetizers like prosciutto and olives. Seafood dishes that have an Asian or lemon twist also make a spectacular combination.
