2008 Late Harvest Riesling
|Wine Type:||Dessert Wine|
Pale lemon in color with green highlights. The pronounced bouquet exudes a complex spice apple brulée with honey and citrus notes. A sip fills the mouth, rich and sumptuous with spicy apple, pear and mandarin flavors and natural fruit sweetness is continually balanced and refreshed by the vintage’s hallmark acidity.
In the late summer, a select block of Riesling grapes was covered by netting to prevent predation by birds and deer. On December 8, 3.1 tons of late harvest, heavily botrytised and raisined (TBA) Riesling grapes were hand harvested and pressed for 48 hours. (34.4 Brix, 8.9 g/L Ta, 3.03pH) Fermentation continued for 26 days at ~65 degrees F and was stopped by chilling at 13.7% alcohol and 11.5% residual sugar.
This lovely wine will be delicious with classical seared foie gras & duck confit, as well as fruit desserts such as Peach Cobbler or an Almond Pear Cake with Crème Fraîche.
