2013 Ice Apple Wine

This apple dessert wine is bright gold in color with an enticing bouquet of apple & pear. A sip is sumptuous and mouth-watering, as rich, sweet apple flavors are balanced by fresh fruit crispness and acidity. The finish is long, vibrant and completely compelling.
This apple dessert wine was produced by cryo-concentrating and then fermenting the concentrated juice. It is a blend of 35% Liberty, 29% Mutsu, 11% Goldrush, 11% Geneva Russet, 4% Stembridge Jersey, 5% Binet Rouge, and 5% Chisel Jersey. This wine is vegan friendly. Approximately 930 gallons of the above blend were trucked from Cornell Orchards to the freezers on January 05, 2014. The juice was frozen in 3 separate tanks for 10 days at 11°F. The tanks went through the cycle of freezing & thawing for a total of 3 times. The overall yield was 230 gallons of juice with a chemistry of 38 Brix. The juice was fermented with VL1 yeast by adding chilled juice in small increments as to keep the Brix of the fermentation between 20- 30. These additions took place over 6 weeks and the fermentation was stopped by chilling the wine at 24.0 Brix, 100 days after it began. The wine was filtered through 10 micron pads on 05/29/14, through 5 pads on 06/03/14, and through 2.0 & .8 micron pads on 06/16/14 & 06/19/14. The wine was sterile filtered at bottling on 06/26/14. The final bottling chemistry was 8.6% alcohol, a pH of 3.72, TA of 16.7 g/L tartaric (14.6 g/L malic), and a residual sugar of 22%. 154 cases were produced.
