2014 Ice Apple Wine

Bright gold in color with an enticing bouquet of apple & pear. A sip is sumptuous and mouth-watering, as rich, sweet apple flavors are balanced by fresh fruit crispness and acidity. The finish is long, vibrant and completely compelling.
930 gallons of blended juices were frozen for 10 days at 11F. After the initial thawing, the cube tanks were trucked back to Regional, re-frozen, and this cycle was repeated twice more. The overall yield from 2 months of thawing was 260 gallons of juice at 38 Brix. The juice was fermented over two weeks, and the fermentation was stopped by chilling at 17.7 Brix, 28 days after it began. 200 ppm SO2 was added after the fermentation had stopped. The fermentation temperature was kept between 57F and 64F throughout. The wine was filtered though 10 micron pads on 04/29/15, thorough 5 micron pads on 05/04/15, and through 2.0 micron and 0.8 micron pads on 05/08/15 and 05/12/15. Free SO2 of 58ppm.
154 cases were produced.
