2008 Ice Apple Splash

Ice Apple Splash is an apple dessert wine, light, bright gold in color with an enticing bouquet of apple, brulée, pear and quince. A sip is sumptuous, mouth-filling and mouthwatering with rich, sweet apple flavors balanced by fresh fruit acidity. The finish is long, vibrant and completely compelling.
This “Iced Cider” was produced by cryoconcentrating and then fermenting the concentrated juice. It is a blend of 48% Mutsu, 31% Liberty, 13% Dabinette and 8% Harry Master’s Jersey from the 2008 season. On January 10, 2009, 990 gallons of blended juice (13.5 Brix, 4.3 g/L Ta as tartaric, 3.57pH) were received from Cornell Orchards. The juice was cold settled then racked to three cubical plastic tanks, which were then frozen for 10 days at 11F. The tanks were allowed to melt for ~12 hours, giving 62 gallons of juice at 43 Brix. The cube tanks were then placed outside to freeze overnight and then brought back in to thaw. Additional rounds of outside freezing and thawing yielded a total of 253 gal at 37.4 Brix.
Surely a match made in heaven with an apple tarte tatin, a cheddar and apple clafouti or even Mom’s best apple pie.
