This apple dessert wine is bright gold in color with an enticing bouquet of apple, brulée, and pear. A sip is sumptuous, mouth-filling and mouth-watering with rich, sweet apple flavors balanced by fresh fruit acidity. The finish is long, vibrant and completely compelling.
This apple dessert wine was produced by cryo-concentrating and then fermenting the concentrated juice. It is a blend of 37% Liberty, 25% Mutsu, 15% Harry Masters Jersey, 6% Brown Snout, 3% Somerset Redstreak and 14% Chisel Jersey. On January 12, 2012, 900 gallons of blended juice were received from Cornell Orchards. The juice was cold settled then racked to three cubical plastic tanks, and frozen for 10 days. The tanks were frozen and thawed three times, producing an overall yield of 236 gallons of juice at 20.6 Brix. For 4 weeks additions of chilled juice in small increments kept the Brix level between 20 and 30. Fermentation was stopped by chilling at 20.6 Brix, 6 weeks after it began.
Surely a match made in heaven with an apple tarte tatin, a cheddar and apple clafouti or even Mom’s best apple pie.
