2008 Cabernet Sauvignon

A youthful medium purple robe. Aromatic oak notes in the nose combine with light, spicy plum fruit. Flavors of sweet oak and blue berries on the palate introduce a lingering fresh finish sustained by moderate and balanced tannins. This Cabernet is young and will repay 2 to 3 years of cellaring.
On October 24, 2008 1.7 tons of Cab Sauvignon was harvested (21.9 Brix, 8.8 g/L Ta, 3.07 pH), crushed, de-stemmed, and pumped to a fermentation tank. The wine fermented for seven days with temperatures that peaked at 85F. The must was pressed on November 3 then racked into four French barrels (75% new/2nd use). Malolactic fermentation finished by the end of December. The final blend was assembled in August 2009 following eight months of barrel aging.
