2008 Pinot Noir

Light garnet in color, the Pinot presents a bouquet of strawberries & red cherries, orange peel and a touch of oak. The wine is medium bodied, balanced and tastes of lightly spiced strawberries and spiced herbs. The finish presents fresh red fruits, ripe tannins against a background finish of light, smoky notes.
On October 10, 2008 2.9 tons of Pinot Block PN2 were harvested (22.3 Brix, 9.6 g/L Ta, 3.31) crushed, de-stemmed, pumped to a fermentation tank and fermented for nine days. The wine was racked to French oak barrels on October 19 and inoculated with malo lactic-bacteria that finished by late December and aged for seven months. The oak composition included: 56% older French, 22% 2nd use mixed French/American, 11% 4th use Allier and 11% 5th use French.
Pinot Noir pairs with leaner meats such as veal, chicken, turkey, rabbit, game birds, and filets of beef and pork. These can be smoked or roasted. Also pair with earthy dishes such as mushrooms.
