2009 Cabernet Sauvignon

Medium purple red in the glass, this wine's aromas express earth, roasted beet mingled with mint and cigar box. Medium in body with flavors of wild berries that carry through to the smooth finish.
The Cabernet Sauvignon was harvested on November 14th amounting to 3.1 tons to be chilled and then crushed and de-stemmed two days later. After being cold soaked for 3 days, fermentation occurred for 10 days before being pressed on November 23. The wines were racked to barrels six days later. Malolactic fermentation was induced and finished in early January. In total, the Cabernet Sauvignon spent 8 months in barrel before final blending in August.
A fine complement for roast lamb, beef and venison.
