2009 Dry Rosé

Our Rosé of Cabernet Franc is pale salmon with a bouquet of grapefruit, red fruit (raspberries, cranberries), floral notes and cardamom. The wine is dry, medium bodied and exhibits fresh flavors of cranberries and grapefruit. Light red fruit tannins add weight, fullness and complexity. This Rosé finishes with lively, tasty fruit and freshness.
On November 6, 2009 three tons of Cabernet Franc were hand-harvested (block CF2, 19.6 Brix, 12.9 g/L TA, 2.78 pH) at 55F. The fruit was crushed and de-stemmed into bins, and refrigerated to cold soak for three days then pressed (20.1 Brix, 8.8 g/L Ta, 3.08 pH). The juice was clarified by settling (cool) for three days, then warmed and inoculated with yeast (Rhone 4600). Fermentation lasted ten days at ~ 60F. Technical adjustments included 4% chapitalization, acid reduction, SO2 addition and filtration.
Best served slightly chilled, Rosé is well suited to grilled sausages and summer vegetables. It is a harmonious match to a bouillabaisse, mushroom and liver paté. For cheese pairings, try local Lively Run Chevre and Cayuga Blue made from goat’s milk.
