Deep garnet in color with a soft, velvety texture. Toasted hazelnut and herbal notes are integrated with aromas of blackberry, dark cherry, and clove. The 2010 Meritage is rich with lingering notes of warm spice at the finish. This is a wine that has, and will continue to, hold well in the cellar.
On 10/11/10, 3.3 tons of Merlot fruit were harvested, crushed, and destemmed. The wine was racked into 3 neutral barrels, and 1 third-use Pennsylvania barrel. The remaining Merlot was racked to a 300 gallon Flex Tank with 8 medium toast NYS Peter DeVivi oak Stix. ML fermentation finished by late November. On 10/21/10, 1.5 tons of Cab Sauvignon were harvested, crushed, and destemmed. The wine was racked to 1 third-use Pennsylvania oak barrel. On 10/8 and 10/9/10, 12.5 tons of Cabernet Franc (from vineyard CF2) were harvested, crushed, and destemmed. The majority of the wine was racked to 26 oak barrels, while some was racked to a 260 gallon stainless steel tank and a 300 gallon Flex Tank, both of which had Peter DeVivi NYS oak Stix added. The wine that ultimately was chosen for this Meritage blend was from a fourth-use French oak barrel.
