2012 Dry Rosé

The 2012 Rosé is a lovely shade of salmon with apricot highlights. The bouquet is fresh and floral showing notes of citrus zest, red cherry and watermelon. The wine is dry, lively and supple with fresh white peach, green apple, citrus and white pepper. The tangy finish showcases the ripe, full energy of the 2012 vintage.
To produce a fresh, lively and fruity Dry Rosé, Cabernet Franc was hand-harvested on October 12, 2013; three weeks before the grapes for table wine. The grapes were crushed, de-stemmed and left to cold-soak in the press overnight to extract a light color and fresh fruit, then pressed the following day. Harvest chemistry was 21.8 Brix, 5.2 g/L Ta, 3.41 pH. The juice was settled in a chilled tank overnight; then racked, warmed and inoculated with yeast (Rhone 4600). The juice fermented for 12 days at 60-64F, and was stopped by chilling. One barrel of Cabernet Franc wine was added to the final blend for a touch of color and complexity.
Rosé wines are dry, crisp, filled with fresh fruit and light tannins. This structure makes them very versatile – charcuterie, pizza, picnics, barbecue, pork and chicken dishes, sandwiches, pasta with tomato sauce to name a few foods. Let your imagination run wild.
