2013 Dry Rosé

Our 2013 Rosé is a lovely shade of salmon with apricot highlights. The bouquet is fresh and light showing notes of citrus zest, red cherry and watermelon. The wine is dry, lively and supple with fresh white peach, strawberry, citrus and white pepper. The finish is crisp, tangy, and succulent.
To produce a fresh, lively and fruity Dry Rosé, Cabernet Franc was hand-harvested in late October when it is cool. The grapes were then crushed, de-stemmed and left to cold-soak in the press overnight to extract a light color and fresh fruit, then pressed the following day. Harvest chemistry was 20.5 Brix and 3.39 pH. The juice was settled in a chilled tank overnight; then racked, warmed and inoculated with yeast (Rhone 4600). The juice fermented cool for 12 days at 60-64F. 0.5% of Cabernet Franc ice wine was added later to add sweetness and for complexity.
Rosé wines are dry, crisp, filled with fresh fruit and light tannins. This structure makes them very versatile – charcuterie, pizza, picnics, barbecue, pork and chicken dishes, sandwiches, pasta with tomato sauce to name a few foods. Let your imagination run wild.
