2015 Dry Rosé
Fresh and lively, food-friendly, and full of fruit. This zippy Rosé greets you with notes of blooming cherry blossoms and bright berries. The fruit character focuses on stone fruits and citrus, with a clear mineral delineation on the palate all the way through a bright and dry finale. This wine has been noted as a classic, Old World expression of rosé.
Between 10/16 and 10/20/15, 35.1 tons of Cabernet Franc were harvested, crushed, destemmed, soaked overnight, and pressed the next day yielding 6683 gallons with a chemistry of 20.8 Brix, a TA of 6.0 g/L and a pH of 3.50.
The juice was settled overnight, racked off the juice lees, and inoculated with Rhone 4600 yeast. Fermentation lasted for 12 days at 60°F-64°F. The wine was chilled to 40°F to cold-stabilize and was then heat-stabilized. Bottling was started in January and continued into February.
2650 cases were produced.
This wine provides mouth-watering acidity to pierce through a heavier protein such as charred steak, but can play a more reserved role when paired with delicate options such as creamy-tomato shrimp. On those bright days, feel free to experiment with a Frisée salad with fresh garden beets, sprouts, gorgonzola and balsamic vinaigrette.
