2012 Reserve Meritage

A medium-bodied red wine, bright with aromas of chocolate, stewed berry and plum, which lead to a long, warm, and spiced finish.
The 2012 Meritage is a right bank Bordeaux style blend, composed of 100% Estate Cabernet Franc, Cabernet Sauvignon, and Merlot. The Merlot that comprises 51% of the blend was harvested on September 26th at 22 Brix. The juice was then fermented in the traditional method in bins with manual punch downs. After fermentation the wine was aged on one 1st-use French barrel, two 2nd-use French barrels and 11 other older barrels. Two lots of Cabernet Franc (8.1 tons from CF2A & 9tons from CF2CF1) were harvested on October 26th at 22.7 Brix. Each lot fermented for 10 days and each was pressed at ~1% RS. The Cabernet Franc selected for the Meritage Blend came largely from the lot aged in FlexTank, with addition of two barrels from lot CF2CF1. Earlier in the harvest, on October 16th, 4.8 tons of Cabernet Sauvignon was harvested at 22 Brix. After crushing and destemming, the fruit fermented for 10 days in four 3rd-use French oak barrels, and one 2nd-use French oak and one 2nd-use American oak barrels. The wine used for the final Meritage blend included the press fraction barrel. The types of oak included one older French oak barrel and three of the newer French and American oak barrels. The wine was racked out of barrel and FlexTank on August 7, after 9 months and was chilled for 3 weeks to 35°F. It was coarse filtered off the tartrates between 8/20/13 and 09/06/13, and sterile filtered at bottling on 09/18/13 and 09/19/13. It was bottled with corks individually tested for cork taint.
