Tasting Notes

Light lemon in color with apple and melon notes in the nose. Anjou Pear & honeysuckle float above its enticing mineral taste and are well integrated with a fresh balance and a clean finish.

Winemaker Notes

On September 30, 2008 4.6 tons were harvested (21.1 Brix, 7.8 g/L TA, 3.41 pH). The crop was crushed, de-stemmed, pressed then settled overnight at 40F with pectolytic enzymes and SO2. After racking off of the lees, the juice was fermented in tank with D47 yeast for 12 days and stopped at 0.5% residual sugar. It was racked from the fermentation lees a month after it stopped fermenting and naturally cold stabilized while stored in outside tanks.
