2008 Reserve Chardonnay

Bright lemon. Notes of butterscotch, lemon, vanilla and pear in the bouquet. Flavors of vanilla, light spice integrated with lemon and butterscotch. Polished, balanced and full. A stylish finish carried by barrel fermentation and fruit characters.
On October 29, 2008 6.5 tons of grapes were harvested (20.8 Brix, 7.3 g/L Ta, 3.43 pH), crushed, de-stemmed, pressed and settled for two days. To develop mouth-feel and character, the juice was kept on the fine lees during fermentation. The free run was inoculated and racked to four French oak barrels. Malolactic bacteria was added three days after the end of fermentation, and continued for approximately 5 weeks. The final blend included 33% new French oak, 17% 2nd use French oak, and 50% older (5 uses or more) French oak.
Pair with light meats such as chicken and pork as well as cream dishes and, of course, cheese in its many incarnations.
