2008 Waterfall Chardonnay

The wine is light lemon with green highlights. The bouquet is clean and linear showing mineral, lime, green apple and stony notes. Medium in body, and round, flavors are of a stony, almost a smoky mineral character with notes of green apple. The lean, fresh finish of stony minerality lingers.
On Oct. 29, 2008 6.5 tons of grapes were harvested (20.8 Brix, 7.3 g/L Ta, 3.43 pH), crushed, de-stemmed, pressed and settled for two days. To develop mouth-feel and character, the juice was kept on the fine lees during fermentation. The free run was fermented cool for about 1.5 months. The press fraction lot was fermented for 14 days. The two lots were combined and malolactic fermentation induced. Weekly lees stirring continued for 4.5 months until the end of March.
