Vibrant yellow gold in color, with a sensuous and silky weave of acid and mineral on the palate. Flowered perfume of rose and passion fruit flow to silky red grapefruit on the finish.
On October 15, 2011, 8.6 tons from the new Gewürztraminer vineyard (GW2), and 1 ton from the older Gewürztraminer vineyard were harvested, and placed into a refrigerated truck for cooling. The fruit was cooled for 2 days, de-stemmed, crushed, and pumped to a stainless steel tank. All of the harvested fruit was cold-soaked until October 20, 2011. The juice had a harvest chemistry of 22.2 Brix, a TA of 6.6 g/L, and a pH of 3.45. Fermentation began on October 22, 2011 and continued for 16 days, being stopped at 0.4% residual sugar.
A well-known partner to turkey, chicken, ham and scallops, it is also delectable as an aperitif with smoked oysters, fried calamari or bacon and mild Blue cheeses such as Gorgonzola or Maytag Blue.
