2011 Reserve Riesling

Pale lemon in color with notes of lime, lemon peel, white peach and spiced baked apple in the nose. Full, focused and elegant mouth-feel. Crisp & dry showing lean citrus, and white flowers…slatey. On November 12, 2011 2.4 tons of Riesling was hand-harvested with chemistry of 19.8 Brix, Ta 7.6 g/L, 2.86 pH. The grapes were pressed as whole-clusters in a single lot to provide the best possible fruit expression and to minimize phenolic extraction through juice to skin contact. The juice was settled for two days and then racked. The clear juice was warmed then inoculated with Epernay 2 yeast. The wine fermented cool for 20 days at ~65F and was stopped with chilling at approximately 0.6% residual sugar. Technical adjustments included the addition of SO2 and cold stabilization by chilling naturally outside. The wine was filtered prior to bottling on June 5, 2012.
This dry, fresh and focused Riesling provides great scope from appetizers though exotic cuisines to German, Austrian, Alsatian and American fare. Meats range from Chicken, pork and duck to smoked fish and shrimp grilled with savory herbs or in spicy sauces. Riesling with a touch of sweetness such as this Reserve can be wonderful matches with Chinese dishes from Cantonese, Hong Kong or Shanghai styles.
