Tasting Notes

Our 2011 Chardonnay is pale lemon in color with bright tropical fruit aromatics. Modest notes of oak mingle with green apple and pear on the palate, leading to a crisp, clean finish.

Winemaker Notes

On Sept 30th, 5.2 tons of Chardonnay were hand harvested and combined with 4.1 tons of Chardonnay received from Atwater Estate Vineyards. The fruit was pressed in a single load with a combined harvest chemistry of 18.5 Brix, TA of 6.9 g/L, and a pH of 3.43. After settling, the juice was racked to 2 tanks, and later Peter DeVivi light toast NY State oak staves were added to each tank. The tanks fermented for ~13 days before stopping at 0.2% residual sugar. ML fermentation was inoculated and finished in early December. The wine was racked off the lees in early February, then heat stabilized and filtered.

Our lightly oaked 2011 Chardonnay pairs well with poultry and pork dishes. Also try a buttery brie with baguette for a simple yet delicious snack.
