Lightly oaked and loaded with aromas of pineapple and papaya. Fresh and lively in the mouth with a finish of golden apples.
On Sept 20th, 9.2 tons of Chardonnay were hand harvested. The fruit was pressed in a single load with a combined harvest chemistry of 21.8 Brix, TA of 67.2 g/L, and a pH of 3.3. After settling, the juice was racked to 2 tanks, and later light toast NY State oak staves were added to each tank. Malolactic fermentation was inoculated and a long cool fermentation finished in early January. The wine was racked off the lees in early February and filtered for bottling.
Pairs well with roasted turkey, fish, and soft cheeses.
