2012 Luckystone Sweet

Pale straw in color with fresh berry and floral aromas. The 2012 Luckystone Sweet invites with sweet fruit and a lively mouthfeel, following through to a tart, raspberry applesauce finish.
On 9/12/12, three tons of PG1 grapes and half a ton of Muscat grapes were harvested together as a field blend with a chemistry of 23.3 Brix, a TA of 6.2 g/L, and a pH of 3.33. The fruit was crushed, destemmed and pressed in a single load and settled for 2 days. After racking and warming the must was fermented for 25 days, stopping at approximately 3% residual sugar. The wine was then cold-stabilized for 6 months, followed by heat stabilization in midDecember. On 1/03/13, one ton of Cab Franc grapes were harvested and pressed frozen for 50 hours resulting in juice with a chemistry of 41.8 Brix, a TA of 6.3 g/L, and a pH of 3.63. An initial aliquot of the juice was diluted with water and fermented for 100 days to approximately 27 Brix. The final blend was assembled in early May, 2013.
The crisp and tart style of Luckystone Sweet drinks well on its own or matches with Asian inspired cuisines complimented with chicken and ginger as well as salty meats such as prosciutto.
