2012 Pinot Gris

The 2012 Pinot Gris is a clear, pale lemon in color with aromas of tropical fruit and soft notes of ripe pear. Hints of pear follow through into kiwi and subtle citrus zest. This Pinot Gris wonderfully expresses the ripeness and weight of the 2012 vintage.
On 09/15/12, 6 tons of PG1 grapes were harvested with a harvest chemistry of 22.5 Brix, a TA of 6.5 g/L, and a pH of 3.35. An additional 8.17 tons was harvested on 09/12/12 from the new vineyard (PG3) with harvest chemistry of 24 Brix, a TA of 6.5 g/L Both lots were crushed, de-stemmed, pressed to tank, and settled for 2 days at 40F after pressing. After being racked off the juice lees, the juices were fermented in 3 separate tanks, with the press fraction kept separate. All the wines were racked off the gross lees 3- 4 weeks after fermentation had ended and chilled for 3.5 months to cold-stabilize.
