2012 Reserve Riesling

Light lemon in color with notes of citrus zest and white peach on the nose. Experience a crisp, elegant mouth-feel that is full of body and flavor that hints at orange and lemon from the start through its cool and slatey finish.
On October 27, 2012, 10.65 tons of Riesling were hand-harvested with a chemistry of 20.4 Brix, 8.1 g/L Ta, 3.10 pH. The fruit was crushed, destemmed, and pressed in a single lot. After pressing, the juice settled for 3 days with the addition of Ultrazyme pectolyc enzymes and 32ppm sulfur dioxide. The cleared juice was racked, warmed, and inoculated with Epernay 2 yeast. It was then kept at 66°F while it fermented for 40 days and reached .6%RS. Fermentation was stopped with chilling on 12/31/12, exactly 2 months after the initial inoculation. The next day, 80 ppm SO2 was added, and the wine was racked off the lees on 1/15/13. The wine was filtered at bottling (bottled early to avoid bottle shock on release) on 4/05/13.
