2013 Pinot Gris

The 2013 Pinot Gris is light, straw yellow in color with aromas of tropical fruit and soft notes of Granny Smith apple. Hints of citrus follow through into a pear and stone fruit finish. This Pinot Gris wonderfully expresses the quality of our vineyard and cool-climate of the Finger Lakes.
On 10/01/2013, 14.2 tons of Pinot Gris was harvested with a harvest chemistry of 22.7 Brix, a TA of 7.4 g/L, and a pH of 3.35. The grapes were crushed, de-stemmed, pressed to tank (in 2 press loads) and settled for 2 days at 40°F. After being racked off the juice lees, the juice was fermented for 14 days to .6% residual sugar. Chilling was used to halt fermentation. The wine was racked off the gross lees 3 weeks after fermentation had ended and was left outside to cold-stabilize.
