2014 Pinot Gris

A full-bodied Pinot Gris, unlike any other in the region. Enjoy aromas of stone fruit layered with a toasty mouthfeel. Crisp and clean.
On 10/05/14—10/06/14, two tons of Pinot Gris were machine-harvested from the new vineyard, along with two tons hand-harvested from PG1, the older block. The fruit was crushed, destemmed, and pressed, which yielded 3617 gallons of juice. The harvest chemistry was 23.0 Brix, 8.2 g/L TA, and a pH of 3.38.
After being racked off the lees, the juice was fermented in two tanks to 0.8% residual sugar. Both lots had stuck fermentations and were subsequently re-started. The smaller ferment finished in 33 days; the larger ferment took 67 days – each stopped by chilling. The wine was racked off the gross lees three weeks after fermentation had ended and left outside to cold stabilize it. 53 ppm free SO2 at bottling.
793 cases were produced.
Regardless of the meal, this wine has great character and a full mouthfeel, and will stand up to light ginger-glazed salads, or perhaps heavier options such as panko-crusted chicken cutlet on a bed of garlic-buttered fettuccine.
