Warm aromatics of ripe peach mingle with tropical fruit notes on the palate. With crisp hints of lime and candied lemon peel, this Riesling is tangy and refreshing with a soft, mineral finish.
7.2 tons of R2 Riesling grapes were harvested on November 13, and 9.9 tons of fruit was harvested from the R1 block on November 14. They were crushed, de-stemmed and pressed in 3 separate pressloads over the two days, with harvest chemistry of 23.5 Brix, a TA of 7.4 g/L, and a pH of 3.20. All the juice was pumped to a single tank. The juice was settled for 5 days with the addition of 30 ppm sulfur dioxide. After being racked, the juice was warmed, inoculated with Epernay 2 yeast and fermented for 16 days.
The wine was racked off the fermentation lees 14 days after the fermentation was stopped and cold stabilized by chilling the wine for 3 months. No heat stabilization was required. The free SO2 at bottling was 43 ppm, and 44-48 on the second tank.

With a bit of sweetness, this Riesling pairs beautifully with dishes carrying a spicy or hearty component. Try as an aperitif with mild Bleu cheese, Brie, or a creamy Muenster.
