2015 Dry Riesling

Honeysuckle and lime on the nose with lemon pith up front on the palate. Refreshing acidity leads to a grapefruit and flint finish.
5.7 tons of R3 grapes and 3.6 tons of R2 grapes were harvested by hand on October 20, 2015 with harvest chemistry of 20.4 Brix, a TA of 7.3 g/L, and a pH of 3.21. The fruit was crushed, destemmed, and pressed on that day. After pressing, the juice was settled for 5 days, then racked to other tanks, racked back, warmed, and inoculated with Epernay 2 yeast. The Dry Riesling fermented at ~ 64F for 31 days before being stopped with chilling on 11/26/15. The wine was racked off the lees on 01/07/16 and chilled to 35F for 14 weeks to cold-stabilize it before bottling.
