2015 Muscat Ottonel

The nose presents lemongrass, white flowers, and fresh sage. Creaminess in the mid palate leads to an orange pith finish.
0.43 tons were harvested from the Muscat row on 9/22/15 and placed in the refrigerated trailer to chill. They were crushed on 9/24/15, and left to cold soak until pressing on 9/27/15. At pressing the harvest chemistry was 18.8 Brix, 4.1 g/L titratable acidity, and a pH of 3.57.
The settled juice was racked to a fermentation tank 2 days later, warmed, and inoculated with Rhône 4600 yeast. The fermentation continued for 10 days at approximately 63F, spiking at 68F, and was stopped by cooling at 0.8% residual sugar. The wine was racked off the gross lees 70 days after fermentation.
The wine was sterile filtered at bottling on 08/16/16, with final chemistry of 11.2% alcohol, a pH of 3.10, TA of 7.2 g/L, and 0.4% residual sugar.
