Candied ginger and clove up front lead to tangerine and honeysuckle on the palate. A voluptuous mid-palate bridges to a ripe tropical fruit finish.
13.5 tons of R2 Riesling and 3.3 tons of R3 Riesling grapes were machine harvested on October 23. They were crushed, de-stemmed and pressed in 3 separate pressloads over the two days, with harvest chemistry of 23 Brix, a TA of 10.5 g/L, and a pH of 3.14. All the juice was pumped to a single tank and settled for 4 days.
After being racked, the juice was warmed, inoculated with Epernay 2 yeast and fermented for 73 days, with heating for the final 45 days. The fermentation was stopped by chilling, and the wine was racked off the fermentation lees 109 days after the fermentation was stopped. The wine was cold stabilized by chilling the wine for 3 months, no heat stabilization was required, and then was sterile filtered during bottling on 05/24/16 and 5/25/16.
