Tasting Notes

Winemaker Notes
3.3 tons of R3 Riesling grapes and 13.5 tons from the R2 block were picked with harvest chemistry of 23 Brix, a TA of 10.4 g/L, and a pH of 3.14.
The juice from pressing was settled for 4 days, then warmed, inoculated, and fermented for 19 days. The fermentation was stopped by chilling at 6% residual sugar, after 26 days of fermentation at ~63ºF. The wine was racked off the fermentation lees after 21 days and was cold stabilized by leaving the wine outside during the winter months. No heat stabilization was necessary. The wine was bottled with a final chemistry of 11.3% alcohol, 6% residual sugar, a pH of 3.15, and TA of 9.5 g/L
471 cases were produced.
